bbq chicken flat bread!



most days i'm so busy i barley even have time to drink yet alone eat. but on days when i have an extra 5 minutes or so i always go to this bbq chicken flat bread. it is so good and so simple to make. although i 
make my own dough , you can easily use a store bought one. on my off days (free moments) i love to throw some boneless skinless chicken breast in the crock pot. i set it and forget it. 8 hours later i have tons of chicken. i  then separate it in freezer bags and thaw it as i need.  i use it in soups, salads, tacos you name it! but in cases like today i had bone in skin on, so  i just seasoned it with salt,pepper, garlic and parsley. rubbed some extra virgin olive oil on it and roasted them for 35 minutes (its so juicy and comes out perfect every time) here's how i made it :) 

2-3 chicken breast (bone in skin on)
seasoned with salt, pepper, garlic powder & parsley
1/2 cup of your favorite bbq sauce (i used sweet baby rays, honey chipotle)
1 cup of mexican blend cheese
1/2 cup parmsean cheese 
1/2 red onion
1/2 green pepper
handfuul of fresh chopped parsley
1 store bought flat bread or your favorite dough recipe

layer the bottom of your bread with bbq sauce , sprinkle onion , green pepper chicken and cheeses. bake at 425 for 10-15 minutes or until cheese is melted. drizzle some more bbq sauce on top and that's it!
